    Why supplier prices creep

Suppliers reprice every week. Chicken, fry oil, dairy and produce follow their markets, and a few cents a pound on one line is easy to miss when the invoice total moves anyway because you ordered a little more or less.

Meat and seafood billed by the pound make it harder: they arrive with a different weight every time, so the line total never matches last week's and the price per pound is the only number worth comparing. Most owners only notice when food cost is high at the end of the month.

    How the report works

We read every line item on each invoice: the item, how much you got and the price you pay per case, each or pound. Then we line up the same item across invoices by its item code, or by its description when there is no code, and only with the same pack size, priced the same way (per case, per each or per lb).

The report lists the prices that went up, biggest increase first, with the change in dollars and percent. Then it lists the prices that went down, the items that showed up on one invoice only, and everything we read from each invoice so you can check it against the paper.

    Worked example

Two Sysco invoices a week apart, on September 4 and September 11:

On the 39.2 lb of chicken on the second invoice, that increase is $8.62 more than the same weight cost a week earlier. See the full example report.

    Questions

    What invoices can I upload?

Two to five invoices from the same supplier, as PDFs or phone photos up to 10 MB each. Broadline suppliers, produce houses and butchers all work, as long as the invoice prints each item, its quantity and its price.

    Do I need an account?

No. Upload your invoices and the report opens on its own private link. There is nothing to sign up for.

What happens to my invoices after the report?

Only people with the report's link can see it. We delete the report and your invoice files 30 days after you upload them, or right away if you choose delete now on the report.

Why are two items with the same name not compared?

We only compare an item with itself: same item code, or same description when there is no code, and the same pack size, priced the same way (per case, per each or per lb). A 40 lb case and a 10 lb case of chicken, or a case and a pound, are different prices for different things.

Does the report show how much margin I lost?

No. It shows price changes only, because it does not know your recipes. Put the new prices into the recipe cost calculator to see what each dish now costs to make.

    Know which dishes it hits

A price change only matters for the menu items that use it. MarginWatch can watch your supplier invoices every week and tell you when a price rises and how much it takes off each dish, in dollars per plate.
